Meat concentration systems
Alfa Laval meat concentration systems are compatible with all raw ground meat materials and are characterized by gentle processing. The short processing time minimizes protein degradation and prevents property changes, resulting in outstanding quality and purity of the flavour, protein, and fat fractions.
First, the raw material is emulsified to a particle size of less than 2 mm. It is thereafter heated and held at an elevated temperature for a specific duration to coagulate the protein. The heating also pasteurizes the product and facilitates the subsequent separation,
Next, the raw material is separated into liquid, solids, and fat in a three-phase decanter.
The solids fraction is flash-cooled and enzymatically treated just enough to make it pumpable, but without modifying the properties too much. The enzymes are immediately inactivated through heating in an Alfa Laval Contherm heat exchanger. The solids are thereafter mixed with the other ingredients and extruded into kibbles.
The fat fraction is purified in a separator before being sprayed onto the final kibbles.
The liquid fraction, known as stick water, contains water-soluble proteins and most of the flavours. It is concentrated under vacuum in an evaporation system, resulting in a flavour-rich fluid that can be sprayed onto the surface of the kibbles or mixed with the ingredients and act as a binder. Using highly efficient Alfa Laval evaporators for water reduction reduces energy consumption considerably compared to other protein processing methods, thereby improving the sustainability of the final product.
